Can I keep it private, just for them?

Yes. Put a password on it and only the person you give it to can open it. Nothing about it is public, no feed, no listing, just the one link you choose to share.

Can I change it after it's live?

Of course. Come back any time to swap a photo, rewrite a line, or switch the whole design, what you made keeps growing as long as you like.
